PUMPKIN BANANA BREAD

Ingredients


SUGAR CRUMBLE TOPPING

  • 1/3 Cup Packed Brown Sugar
  • 2 Tablespoons Flour
  • 1/8 Teaspoon Cinnamon
  • 1 Tablespoon Butter
    • Melted

DOUGH

  • 2 Cups Flour
  • 3/4 Cup Sugar
  • 3/4 Teaspoon Baking Soda
  • 2 Teaspoons Pumpkin Pie Spice
  • 2 Ripe Bananas
    • Mashed
  • 3/4 Cup Canned Pumpkin Puree
  • 1/4 Cup Milk
  • 2 Large Eggs
    • Lightly Beaten
  • 6 Tablespoons Unsalted Butter
    • Melted and Cooled
  • 1 1/2 Teaspoons Vanilla Extract

Directions


Preheat oven to 350 degrees. Grease a 9 inch loaf pan.

SUGAR CRUMBLE TOPPING

  1. In a small bowl, combine the brown sugar, flour, cinnamon and butter.

  2. Crumble should resemble coarse cornmeal.

DOUGH

  1. In a large bowl, whisk together the flour, sugar, baking soda and pumpkin pie spice. Set the mixture aside.

  2. In a medium bowl, whisk together the mashed bananas, pumpkin puree, milk, eggs, butter and vanilla.

  3. Add the wet ingredients to the dry ingredients and mix just until combined.

  4. Pour the batter into the prepared baking pan and then liberally sprinkle with the sugar crumble topping.

  5. Bake the bread for 55 minutes, or until toothpick comes out clean.

  6. Allow to cool, slice and serve.
