PEANUT SAUCE

Ingredients


  • 1 Can Full-Fat Coconut Milk
  • 1/4 Cup Massaman Curry Paste + Thai Red Curry Paste
  • 3/4 Cup Peanut Butter
  • 1/2 Tablespoon Salt
  • 1/4 Cup Sugar
  • 2 Tablespoons Apple Cider Vinegar
  • 1/2 Cup Water

Directions


  1. Fill the 1/4 Cup most of the way with the Massaman Paste and the rest of the way with the Red Curry Paste. It’s about a 3 to 1 Ratio.

  2. Put all ingredients into a thick bottomed pan and whisk together.

  3. Put pan on medium heat and bring to a gentle boil, whisking occasionally as the sauce thickens.

  4. Let the sauce simmer for 3-5 minutes, whisking occasionally.

  5. Let the sauce cool slightly.

Notes:
Watch this closely and stir often to keep it from splitting.
