Ingredients
- 1 Can Full-Fat Coconut Milk
- 1/4 Cup Massaman Curry Paste + Thai Red Curry Paste
- 3/4 Cup Peanut Butter
- 1/2 Tablespoon Salt
- 1/4 Cup Sugar
- 2 Tablespoons Apple Cider Vinegar
- 1/2 Cup Water
Directions
- Fill the 1/4 Cup most of the way with the Massaman Paste and the rest of the way with the Red Curry Paste. It’s about a 3 to 1 Ratio.
- Put all ingredients into a thick bottomed pan and whisk together.
- Put pan on medium heat and bring to a gentle boil, whisking occasionally as the sauce thickens.
- Let the sauce simmer for 3-5 minutes, whisking occasionally.
- Let the sauce cool slightly.
Notes:
Watch this closely and stir often to keep it from splitting.
