PEACH PIE BARS

Ingredients


PEACH MIXTURE

  • 3/4 Cup Sugar
  • 3 1/2 Tablespoons Cornstarch
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Nutmeg
  • 1/4 Teaspoon Ginger
  • 4 1/2 Cups Peaches
    • Peeled and Diced
  • 2 Tablespoons Orange Juice
  • 1 Teaspoon Orange Zest

DOUGH

  • 3 Cups Flour
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 3/4 Cup Salted Butter
    • Cold and Diced into Cubes
  • 1 Large Egg
  • 1/4 Cup Sour Cream
  • 1 1/2 Teaspoons Vanilla Extract
  • 1 Cup Sugar

Directions


Preheat oven to 375 degrees.
Grease a 13×9 inch baking dish.

PEACH MIXTURE

  1. In a small bowl, whisk together sugar, cornstarch, cinnamon, nutmeg and ginger.

  2. In a large bowl, toss peaches with orange juice and orange zest.

  3. Sprinkle sugar mixture over peach mixture and toss to evenly coat and set aside.

DOUGH

  1. In a large mixing bowl, whisk together flour, baking powder and salt.

  2. Cut butter into flour mixture with a fork until it resembles coarse crumbs.

  3. In a small bowl, whisk together egg, sour cream and vanilla extract.

  4. Pour egg mixture into flour mixture and stir until well combined.

  5. Add in sugar and stir until well combined.

ASSEMBLE

  1. Spread and press half of crumb mixture into an even layer in the baking dish.

  2. Toss peach mixture once more and pour over bottom crumb layer and spread peaches into an even layer.

  3. Sprinkle remaining crumb mixture over top of peaches in an even layer.

  4. Sprinkle top evenly with 1 Tablespoon of sugar (optional).

  5. Bake for 45-50 minutes until golden. Serve warm or cooled with ice cream.

Notes:
Use about 8 small peaches, firm but ripe. If they are too ripe, the whole thing will have too much liquid and create a seriously soggy bottom.
