Ingredients


DOUGH

  • 2 Cups Tapioca Flour
  • 1 Cup Whole Milk
  • 1/2 Cup Veggie Oil
  • 1 Teaspoon Salt
  • 2 Large Eggs
  • 1 1/2 Cup Parmesan Cheese
    • Grated

Directions


  1. Preheat oven to 350 degrees.
  2. Line two baking sheets with parchment paper.

DOUGH

  1. Put tapioca flour in a medium mixing bowl and set aside.

  2. Add milk, oil and salt to a medium saucepan and bring to a gentle boil, stirring occasionally. Remove from heat as soon as you see big bubbles.

  3. Add milk mixture to flour and stir with a wooden spoon. As soon as it is cool enough to handle, mix by hand for a few minutes until the mixture is smooth and has cooled down.

  4. Add eggs, one at a time, and mix until fully incorporated.

  5. Add cheese and mix. The dough will be very very sticky!

ASSEMBLY

  1. Scoop the dough onto baking sheet, spacing them 2 inches apart.

  2. Bake for 17-22 minutes, rotating the sheet halfway, until the dough has puffed and the bottoms turn golden-brown

Notes:
Dough is very very sticky. Wet down two spoons or an ice cream scoop.
