Ingredients
DOUGH
- 2 Cups Tapioca Flour
- 1 Cup Whole Milk
- 1/2 Cup Veggie Oil
- 1 Teaspoon Salt
- 2 Large Eggs
- 1 1/2 Cup Parmesan Cheese
- Grated
Directions
- Preheat oven to 350 degrees.
- Line two baking sheets with parchment paper.
DOUGH
- Put tapioca flour in a medium mixing bowl and set aside.
- Add milk, oil and salt to a medium saucepan and bring to a gentle boil, stirring occasionally. Remove from heat as soon as you see big bubbles.
- Add milk mixture to flour and stir with a wooden spoon. As soon as it is cool enough to handle, mix by hand for a few minutes until the mixture is smooth and has cooled down.
- Add eggs, one at a time, and mix until fully incorporated.
- Add cheese and mix. The dough will be very very sticky!
ASSEMBLY
- Scoop the dough onto baking sheet, spacing them 2 inches apart.
- Bake for 17-22 minutes, rotating the sheet halfway, until the dough has puffed and the bottoms turn golden-brown
Notes:
Dough is very very sticky. Wet down two spoons or an ice cream scoop.
