Ingredients
BATTER
- 1 Cup Banana (Approx. 3)
- Well Mashed
- 3/4 Cup Sugar
- 2 Tablespoons Canola Oil
- 1/3 Cup Almond Milk
- 1 Teaspoon Vanilla Extract
- 1 1/2 Cup Flour
- 3/4 Teaspoon Baking Soda
- 3/4 Teaspoon Salt
- 3 Tablespoons Unsweetened Cocoa Powder
- 6 Tablespoons Boiling Water
Directions
- Preheat oven to 350 degrees.
- Grease a 9 inch loaf pan.
BATTER
- In a large bowl, combine the banana with the sugar, oil, milk and vanilla, whisking until smooth.
- Add the flour, baking soda and salt and gently mix to incorporate. Do not overmix; It’s okay if there is still some flour visible.
- Scoop out 1 cup of the batter and transfer it to a small bowl.
- In a heatproof cup, mix the cocoa powder with 3 tablespoons of boiling water and stir vigorously with a fork until the chocolate is dissolved.
- Add this chocolate mixture to the 1 cup of batter and mix until the chocolate is thoroughly smooth and incorporated.
- Add 3 tablespoons of boiling water to the big bowl of plain batter and mix until relatively smooth.
ASSEMBLY
- Scoop alternate 1/2 cups of chocolate and plain batter into the pan. This doesn’t have to be precise, in fact, the more random, the better.
- Once all the batter is in the pan, take a knife and swirl it through the batter.
- Bake for 45 to 55 minutes until a knife does not coat with batter when inserted.
