MARBLED BANANA BREAD

Ingredients


BATTER

  • 1 Cup Banana (Approx. 3)
    • Well Mashed
  • 3/4 Cup Sugar
  • 2 Tablespoons Canola Oil
  • 1/3 Cup Almond Milk
  • 1 Teaspoon Vanilla Extract
  • 1 1/2 Cup Flour
  • 3/4 Teaspoon Baking Soda
  • 3/4 Teaspoon Salt
  • 3 Tablespoons Unsweetened Cocoa Powder
  • 6 Tablespoons Boiling Water

Directions


  1. Preheat oven to 350 degrees.
  2. Grease a 9 inch loaf pan.

BATTER

  1. In a large bowl, combine the banana with the sugar, oil, milk and vanilla, whisking until smooth.

  2. Add the flour, baking soda and salt and gently mix to incorporate. Do not overmix; It’s okay if there is still some flour visible.

  3. Scoop out 1 cup of the batter and transfer it to a small bowl.

  4. In a heatproof cup, mix the cocoa powder with 3 tablespoons of boiling water and stir vigorously with a fork until the chocolate is dissolved.

  5. Add this chocolate mixture to the 1 cup of batter and mix until the chocolate is thoroughly smooth and incorporated.

  6. Add 3 tablespoons of boiling water to the big bowl of plain batter and mix until relatively smooth.

ASSEMBLY

  1. Scoop alternate 1/2 cups of chocolate and plain batter into the pan. This doesn’t have to be precise, in fact, the more random, the better.

  2. Once all the batter is in the pan, take a knife and swirl it through the batter.

  3. Bake for 45 to 55 minutes until a knife does not coat with batter when inserted.
