Ingredients
BATTER
- 1 3/4 Cup Flour
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1 Teaspoon Salt
- 1/2 Cup Butter
- Room Temperature
- 2 Tablespoons Maple Butter
- 1/2 Cup Brown Sugar
- 3 Bananas
- Mashed
- 1/3 Cup Sour Cream
- 1/4 Cup Maple Syrup
- 1 Tablespoon Vanilla Extract
- 2 Eggs
- Separated
Directions
- Preheat the oven to 350 degrees.
- Grease a 9×5″ loaf pan (or line with parchment paper).
- In a medium bowl, whisk together flour, baking soda, baking powder and salt.
- With a mixer, cream together butter, maple butter and brown sugar until light and fluffy.
- In the mixer bowl, add mashed bananas, sour cream, maple syrup, vanilla extract and egg YOLKS. Mix until well combined.
- Add the dry ingredients slowly and mix on low until combined.
- In a separate bowl, whip egg whites to medium peaks.
- Add egg whites to mixer bowl and fold in gently.
BAKE
- Pour batter into baking pan and bake for 50-60 minutes.
- Let cool completely before turning out of pan.
Notes:
This bread rises so nicely and even if it gets a little dark on top, it stays moist.

I tried cutting down the sugar to 1/4 Cup. It didn’t rise as nicely, but still tasted great.
