MAPLE BANANA BREAD

Ingredients


BATTER

  • 1 3/4 Cup Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • 1/2 Cup Butter
    • Room Temperature
  • 2 Tablespoons Maple Butter
  • 1/2 Cup Brown Sugar
  • 3 Bananas
    • Mashed
  • 1/3 Cup Sour Cream
  • 1/4 Cup Maple Syrup
  • 1 Tablespoon Vanilla Extract
  • 2 Eggs
    • Separated

Directions


  1. Preheat the oven to 350 degrees.

  2. Grease a 9×5″ loaf pan (or line with parchment paper).

  3. In a medium bowl, whisk together flour, baking soda, baking powder and salt.

  4. With a mixer, cream together butter, maple butter and brown sugar until light and fluffy.

  5. In the mixer bowl, add mashed bananas, sour cream, maple syrup, vanilla extract and egg YOLKS. Mix until well combined.

  6. Add the dry ingredients slowly and mix on low until combined.

  7. In a separate bowl, whip egg whites to medium peaks.

  8. Add egg whites to mixer bowl and fold in gently.

BAKE

  1. Pour batter into baking pan and bake for 50-60 minutes.

  2. Let cool completely before turning out of pan.

Notes:
This bread rises so nicely and even if it gets a little dark on top, it stays moist.

Notes KT:
I tried cutting down the sugar to 1/4 Cup. It didn’t rise as nicely, but still tasted great.
