LONGEVITY NOODLES

Ingredients


  • Noodles
  • 1 Large Carrot
    • Thinly Sliced
  • 4-5 Baby Bok Choy
    • Chopped
  • 1 Cup Chicken/Shrimp/Beef

SAUCE

  • 1 Cup Water
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Hoisin Sauce
  • 1-2 Teaspoons Ginger
    • Minced
  • 1 Stalk Green Onion
    • Finely Chopped
  • 1-2 Cloves Garlic
    • Minced

Directions


PREP AND COOK

  1. In a bowl, combine water, soy sauce, hoisin, ginger, green onion and garlic. Mix well and set aside.
  2. In a large pot, boil water and cook noodles per packets instructions. Cool and set aside. *Pour a teaspoon of sesame oil over the noodles and stir. This will prevent them from sticking together and forming a big blob!
  3. Chop the carrots, bok choy and chicken. 
  4. Preheat a wok (or large skillet) over high heat. Once hot, add 1 tablespoon of veggie oil and swirl around the pan.
  5. Add the chicken to the pan and stir around for 2 minutes, browning the chicken. Remove from the wok and set aside.
  6. Rinse and dry the wok and return to stove. Allow the pan to heat up, add 1 teaspoon of oil and swirl around the pan. Add the green onion and stir.
  7. Add the carrots and bok choy and stir to combine. Let it cook for about 1 minute.
  8. Add the chicken back to the pan and add the sauce. Stir to combine.
  9. Add the noodles and mix everything. Allow the ingredients to cook until the sauce has penetrated the noodles and has thickened slightly. 

Notes:
Use whatever meat you prefer. I tried shrimp once and chicken the second time, they were both great!
