Ingredients
- Noodles
- 1 Large Carrot
- Thinly Sliced
- 4-5 Baby Bok Choy
- Chopped
- 1 Cup Chicken/Shrimp/Beef
SAUCE
- 1 Cup Water
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Hoisin Sauce
- 1-2 Teaspoons Ginger
- Minced
- 1 Stalk Green Onion
- Finely Chopped
- 1-2 Cloves Garlic
- Minced
Directions
PREP AND COOK
- In a bowl, combine water, soy sauce, hoisin, ginger, green onion and garlic. Mix well and set aside.
- In a large pot, boil water and cook noodles per packets instructions. Cool and set aside. *Pour a teaspoon of sesame oil over the noodles and stir. This will prevent them from sticking together and forming a big blob!
- Chop the carrots, bok choy and chicken.
- Preheat a wok (or large skillet) over high heat. Once hot, add 1 tablespoon of veggie oil and swirl around the pan.
- Add the chicken to the pan and stir around for 2 minutes, browning the chicken. Remove from the wok and set aside.
- Rinse and dry the wok and return to stove. Allow the pan to heat up, add 1 teaspoon of oil and swirl around the pan. Add the green onion and stir.
- Add the carrots and bok choy and stir to combine. Let it cook for about 1 minute.
- Add the chicken back to the pan and add the sauce. Stir to combine.
- Add the noodles and mix everything. Allow the ingredients to cook until the sauce has penetrated the noodles and has thickened slightly.
Notes:
Use whatever meat you prefer. I tried shrimp once and chicken the second time, they were both great!
