LEMON CURD

Serves: 1/2 Cup

Ingredients


  • 1/4 Cup Fresh Lemon Juice
  • 2 Teaspoons Grated Lemon Zest
  • 1/3 Cup Sugar
  • 4 Egg Yolks
  • 3 Tablespoons Butter

Directions


  1. Combine all ingredients in a heatproof metal bowl.

  2. Over a pot of simmering water, whisk until mixture thickens.

  3. It’s done when the mixture is thick enough to coat the back of a spoon.

  4. Remove from heat, cover and allow to cool.

Notes:
Keeps in the fridge for up to 2 weeks.
