Ingredients
- 1/4 Cup Fresh Lemon Juice
- 2 Teaspoons Grated Lemon Zest
- 1/3 Cup Sugar
- 4 Egg Yolks
- 3 Tablespoons Butter
Directions
- Combine all ingredients in a heatproof metal bowl.
- Over a pot of simmering water, whisk until mixture thickens.
- It’s done when the mixture is thick enough to coat the back of a spoon.
- Remove from heat, cover and allow to cool.
Notes:
Keeps in the fridge for up to 2 weeks.
