LEBANESE LENTIL SOUP

Ingredients


LENTILS

  • 2 1/2 Cups Red Lentils
  • 7 Cups Water

SOUP

  • 2 Onions
  • 4 Carrots
  • 1 Potato
  • 1 Cup Water
  • 5 Cloves Garlic
  • 1 Tablespoon Garlic Powder
  • Cayenne, Pepper and Salt to taste
  • 1 Teaspoon Cumin
  • 8-10 Cups Veggie Stock
  • 2 Tablespoons Lemon Juice

Directions


LENTILS

  1. Put lentils and water into a large pot, bring to a boil, then simmer until lentils are cooked.

SOUP

  1. Cut onion, carrots and potato into really small pieces and then add to pot.

  2. Continue to cook adding up to a cup of water as needed.

  3. Mince garlic and then add to the pot.

  4. Add spices to pot and stir.

  5. Slowly add to veggie stock to pot, 2 cups at a time. See picture for desired finished texture.

  6. Add lemon to pot and mix.

Tastes even better the next day!
