Ingredients
LENTILS
- 2 1/2 Cups Red Lentils
- 7 Cups Water
SOUP
- 2 Onions
- 4 Carrots
- 1 Potato
- 1 Cup Water
- 5 Cloves Garlic
- 1 Tablespoon Garlic Powder
- Cayenne, Pepper and Salt to taste
- 1 Teaspoon Cumin
- 8-10 Cups Veggie Stock
- 2 Tablespoons Lemon Juice
Directions
LENTILS
- Put lentils and water into a large pot, bring to a boil, then simmer until lentils are cooked.
SOUP
- Cut onion, carrots and potato into really small pieces and then add to pot.
- Continue to cook adding up to a cup of water as needed.
- Mince garlic and then add to the pot.
- Add spices to pot and stir.
- Slowly add to veggie stock to pot, 2 cups at a time. See picture for desired finished texture.
- Add lemon to pot and mix.
