HOT COCOA COOKIES

Ingredients


COOKIES

  • 1/2 Cup Browned Butter
  • 1/2 Cup Brown Sugar
  • 1/4 Cup Sugar
  • 1 Egg
  • 1/2 Tablespoon Vanilla
  • 1 1/4 Cup Flour
  • 1/8 Cup Cocoa Powder
  • 1/2 Packet Hot Chocolate
  • 1/2 Tablespoon Cornstarch
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • Pinch of Cayenne Powder
  • 1/2 Cup Chocolate Chips
  • 1/2 Cup Marshmallows

Directions


PREP AND BAKE

  1. Preheat oven to 350 degrees.
  2. Place butter in a saucepan and melt over medium heat, stirring until it foams up and starts to turn brown. Remove from heat, scrap the pan and let it cool.
  3. In a large bowl, add your sugars and whisk to combine. 
  4. In a separate bowl, combine flour, cocoa powder, hot chocolate, cornstarch, baking soda, salt and cayenne.
  5. In the large bowl with sugar, pour in the butter and whisk to combine.
  6. Add egg and vanilla to sugar bowl and whisk until fluffy.
  7. Add bowl of dry ingredients to bowl and fold until just combined.
  8. Add chocolate chips and marshmallows and fold in. Don’t overmix!
  9. Cover a baking sheet with parchment paper, scoop cookie dough and bake for 8-10 minutes. 
  10. Top with sea salt, if you please.

Notes:
The dough was looking very dry when I was combining it, so I didn’t put all of the flour mixture in and then the cookies spread a lot when baking… so I should probably follow this recipe 🙂
