GREEN BEAN ALMONDINE

Ingredients


  • 1 lb. French Green Beans
  • 3 Tablespoons Butter
  • 1/2 Cup Sliced Almonds
  • 1 Shallot
    • Finely Chopped
  • 2 Cloves Garlic
    • Finely Chopped
  • Zest from 1 Lemon
  • 2 Teaspoons Lemon Juice
  • Black Pepper

Directions


  1. Bring a large pot of salted water to a boil and prep an ice bath in a large bowl.
  2. Cook beans until crisp tender (slightly undercooked).
  3. Drain and transfer to ice bath to cool. Drain from ice bath.
  4. In a large skillet over medium-low heat, melt butter until bubbling.
  5. Add almonds and stir frequently until golden brown.
  6. Reduce heat to low and add shallots and garlic, stir occasionally until fragrant.
  7. Add green beans and toss until combined and beans are tender.
  8. Stir in lemon zest and juice. Add salt and pepper and serve.
