Ingredients
- 1 Cup Butter
- 2 Teaspoons Ground Ginger
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Allspice
- 1/4 Teaspoon Cayenne Powder
- Pinch of Cloves
- Pinch of Black Pepper
- 1 1/2 Cups Dark Brown Sugar
- 2 Tablespoons Molasses
- 1 Tablespoon Grated Ginger
- 2 Eggs
- 2 Tablespoons Vanilla Extract
- 2 Cups Flour
- 2 Teaspoons Baking Powder
Directions
MIX
- Preheat oven to 350. Grease a pie pan or a 9×9″ square pan.
- In a saucepan, heat butter over medium heat. Swirl occasionally until butter has melted and is browned slightly.
- While butter is melting, combine ground ginger, cinnamon, salt, allspice, cayenne, cloves and pepper in a small bowl.
- Remove butter from heat and add the spices to the saucepan allowing them to bloom for 1 minute.
- In a large bowl, combine the brown sugar, molasses and grated ginger. Add the butter and spices and whisk until combined. Let it cool slightly.
- Add the eggs and vanilla and whisk until smooth.
- Add the flour and baking powder and whisk well to combine.
- Pour batter into pan and bake for 18-28 minutes. Edges will be firm, but the center will still have a little jiggle.
Notes:
Cayenne can be omitted if you don’t like things too spicy.
