Ingredients

  • 1 Cup Butter
  • 2 Teaspoons Ground Ginger
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Allspice
  • 1/4 Teaspoon Cayenne Powder
  • Pinch of Cloves
  • Pinch of Black Pepper
  • 1 1/2 Cups Dark Brown Sugar
  • 2 Tablespoons Molasses
  • 1 Tablespoon Grated Ginger
  • 2 Eggs
  • 2 Tablespoons Vanilla Extract
  • 2 Cups Flour
  • 2 Teaspoons Baking Powder

Directions

MIX

  1. Preheat oven to 350. Grease a pie pan or a 9×9″ square pan.

  2. In a saucepan, heat butter over medium heat. Swirl occasionally until butter has melted and is browned slightly.

  3. While butter is melting, combine ground ginger, cinnamon, salt, allspice, cayenne, cloves and pepper in a small bowl.

  4. Remove butter from heat and add the spices to the saucepan allowing them to bloom for 1 minute.

  5. In a large bowl, combine the brown sugar, molasses and grated ginger. Add the butter and spices and whisk until combined. Let it cool slightly.

  6. Add the eggs and vanilla and whisk until smooth.

  7. Add the flour and baking powder and whisk well to combine.
  8. Pour batter into pan and bake for 18-28 minutes. Edges will be firm, but the center will still have a little jiggle.

Notes:
Cayenne can be omitted if you don’t like things too spicy.
