Ingredients
- 2 Tablespoons Ginger
- Grated
- 3 Cloves Garlic
- Minced
- 1 Teaspoon Cumin
- 1 Teaspoon Salt
- 1/2 Teaspoon Coriander
- 1 lb Ground Pork
- 1/2 Cup Panko Bread Crumbs
- 2 Tablespoons Cilantro
- 2 Tablespoons Olive Oil
- 2 Cups Diced Tomatoes
- 1 Teaspoon Soy Sauce
- 4 Scallions
- 1 Lime
Directions
ASSEMBLE
- In a large bowl, mix together 1 1/2 Tablespoons ginger, garlic, cumin, salt and coriander.
- Add pork, panko and cilantro and using your hands, mix together being sure to not overwork.
- Shape into 1 1/4-inch balls.
- Heat a large skillet over medium heat, add oil and meatballs.
- Cook, turning and browning the meatballs 7-10 minutes
- Remove meatballs, scrape the browned bits in the pan, add remaining ginger and cook for 1 minute.
- Add tomatoes, soy sauce and a pinch of salt to the pan and stir to combine.
- Add meatballs back to the pan, cover and cook until done (5-8 minutes).
- Add scallions and lime juice.
Notes:
I did a mix of 3/4 ground pork and 1/4 ground beef. Full pork was too rich/fat for my liking.
