GINGER MEATBALLS

Ingredients


  • 2 Tablespoons Ginger
    • Grated
  • 3 Cloves Garlic
    • Minced
  • 1 Teaspoon Cumin
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Coriander
  • 1 lb Ground Pork
  • 1/2 Cup Panko Bread Crumbs
  • 2 Tablespoons Cilantro
  • 2 Tablespoons Olive Oil
  • 2 Cups Diced Tomatoes
  • 1 Teaspoon Soy Sauce
  • 4 Scallions
  • 1 Lime

Directions


ASSEMBLE

  1. In a large bowl, mix together 1 1/2 Tablespoons ginger, garlic, cumin, salt and coriander.
  2. Add pork, panko and cilantro and using your hands, mix together being sure to not overwork.
  3. Shape into 1 1/4-inch balls.
  4. Heat a large skillet over medium heat, add oil and meatballs.
  5. Cook, turning and browning the meatballs 7-10 minutes
  6. Remove meatballs, scrape the browned bits in the pan, add remaining ginger and cook for 1 minute.
  7. Add tomatoes, soy sauce and a pinch of salt to the pan and stir to combine.
  8. Add meatballs back to the pan, cover and cook until done (5-8 minutes).
  9. Add scallions and lime juice.

Notes:
I did a mix of 3/4 ground pork and 1/4 ground beef. Full pork was too rich/fat for my liking.
