Ingredients
MUFFIN
- 2 Cups Flour
- 1/2 Cup Sugar
- 3/4 Teaspoon Salt
- 1 Tablespoon Baking Powder
- 1/4 Teaspoon Nutmeg
- 1/4 Cup Brown Sugar
- 1 Stick Butter
- Room Temperature
- 2 Eggs
- 3/4 Cup Eggnog
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Rum
CRUNCHY TOPPING
- 1/2 Cup Sugar
- 1/2 Cup Flour
- 1/2 Teaspoon Nutmeg
- 1/8 Teaspoon Rum
- 3 Tablespoons Butter
- Melted
Directions
Preheat oven to 425 degrees.
Line muffin tin or grease/spray.
MUFFIN BATTER
- In a large mixing bowl, combine flour, sugar, salt, baking powder, nutmeg and brown sugar.
- In a medium mixing bowl, cream the butter until smooth.
- Add the eggs, one at a time and mixing until combined.
- Add in the eggnog, vanilla and rum and stir to combine.
- Add the dry ingredients and stir until thoroughly combined.
- Spoon the batter evenly into the prepared muffin tins.
CRUNCHY TOPPING
- Combine all topping ingredients and mix until crumbly. Do not overmix!
- Sprinkle over the top of the muffins
- Bake for 20 minutes or until pale golden brown.
Notes:
I used rum extract and it seemed to work just fine.
