Ingredients
BATTER
- 1 Cup Flour
- 1/2 Cup Cocoa Powder
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1 cup Sugar
- 1/4 Teaspoon Salt
- 1 Egg
- 1/2 Cup Sour Cream
- Or Vanilla Yogurt
- 1/2 Cup Olive Oil
- 1 Teaspoon Vanilla Extract
- 1/2 Cup Hot Coffee
GANACHE
- 2/3 Cup Dark Chocolate Chips
- 1 Tablespoon Butter
- 1/2 Cup Heavy Whipping Cream
- Pinch of Salt
- 1/2 Teaspoon Vanilla Extract
Directions
- Preheat the oven to 350 degrees.
- Line a 9 inch round cake pan with parchment paper and brush the paper with olive oil.
- In a medium bowl, sift flour, cocoa powder, baking powder and baking soda. Add sugar and salt and mix thoroughly.
- In a large bowl, add egg, sour cream, olive oil and vanilla extract and whisk until combined.
- Add the flour mixture to the large bowl and mix until a thick batter forms. Add the hot coffee and whisk until combined.
- Pour the batter into the cake pan and bake for 25-30 minutes.
GANACHE
- In a small heatproof bowl, add the chocolate chips and butter.
- In a small saucepan over medium heat, warm heavy whipping cream until simmering.
- Pour over the chocolate and butter and let stand for a minute before mixing to combine.
- Add salt and vanilla and stir to incorporate.
- Allow the ganache to cool slightly before applying it to the cake.

You can sub the coffee for hot water. My cake was still a little uncooked in the center, but I preferred that to letting the edges overcook.

I made a ganache out of peppermint chocolate chips for the holiday season and it was equally amazing!
