DARK CHOCO OLIVE OIL CAKE

Ingredients


BATTER

  • 1 Cup Flour
  • 1/2 Cup Cocoa Powder
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 cup Sugar
  • 1/4 Teaspoon Salt
  • 1 Egg
  • 1/2 Cup Sour Cream
    • Or Vanilla Yogurt
  • 1/2 Cup Olive Oil
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup Hot Coffee

GANACHE

  • 2/3 Cup Dark Chocolate Chips
  • 1 Tablespoon Butter
  • 1/2 Cup Heavy Whipping Cream
  • Pinch of Salt
  • 1/2 Teaspoon Vanilla Extract

Directions


  1. Preheat the oven to 350 degrees.

  2. Line a 9 inch round cake pan with parchment paper and brush the paper with olive oil.

  3. In a medium bowl, sift flour, cocoa powder, baking powder and baking soda. Add sugar and salt and mix thoroughly.

  4. In a large bowl, add egg, sour cream, olive oil and vanilla extract and whisk until combined.

  5. Add the flour mixture to the large bowl and mix until a thick batter forms. Add the hot coffee and whisk until combined.

  6. Pour the batter into the cake pan and bake for 25-30 minutes.

GANACHE

  1. In a small heatproof bowl, add the chocolate chips and butter.

  2. In a small saucepan over medium heat, warm heavy whipping cream until simmering.
  3. Pour over the chocolate and butter and let stand for a minute before mixing to combine.
  4. Add salt and vanilla and stir to incorporate.
  5. Allow the ganache to cool slightly before applying it to the cake.

Notes:
You can sub the coffee for hot water. My cake was still a little uncooked in the center, but I preferred that to letting the edges overcook.

I made a ganache out of peppermint chocolate chips for the holiday season and it was equally amazing!
