Ingredients
- 2 Cups Flour
- 1/2 Teaspoons Baking Soda
- 1/2 Teaspoon Salt
- 12 Tablespoons Unsalted Butter
- Melted and Cooled
- 1 Cup Brown Sugar
- 1/2 Cup Sugar
- 1 Egg
- 1 Egg Yolk
- 2 Teaspoons Vanilla Extract
- 1 Cup Chopped White Chocolate
- 1 Cup Coconut
- 1 Cup Macadamia Nuts
- Toasted
- 1 to 2 Tablespoons Grated Lime Zest
Directions
- Melt the butter and let it cool. Preheat the oven to 325 degrees.
- Mix flour, baking soda and salt together in a medium bowl.
- In a large bowl, mix butter and sugars until thoroughly blended.
- Mix in egg yolk and vanilla.
- Add dry ingredients to this bowl and mix until combined.
- Add and mix white chocolate chips, coconut, macadamia nuts and lime zest.
- Scoop dough into balls and place on parchment lined baking sheets.
- Bake for 9-10 minutes, until cookies are set around outer edges, yet centers are still soft and puffy.
- Cool cookies on sheets for a few minutes, then transfer to a cooling rack.
