Ingredients
SHELL
- 225 g Graham Crackers
- smashed
- 3 Tablespoons Brown Sugar
- 6 Tablespoons Butter
- Melted
- Dash of Salt
FILLING
- 445 g (two 8-oz packages) Cream Cheese
- Room Temperature
- 1 Cup Sour Cream
- 1/2 Cup Sugar
- 2 Eggs
- 3 Tablespoons Lemon Juice
- 3 Tablespoons Lemon Zest
- Pinch of Salt
- Grapefruit
Directions
SHELL
- Preheat oven to 325 degrees.
- Smash graham crackers into crumb and put into a bowl.
- Add the brown sugar, melted butter and salt to the bowl.
- Mix to combine and then press into a 9-inch pie plate.
- Bake 10-12 minutes until golden brown.
FILLING
- In a food processor, add cream cheese, sour cream and sugar. Mix until smooth (2 minutes)
- Add eggs, juice, zest and salt and process to combine.
- Pour the filling into the crust and bake until almost set, 20-30 minutes.
- Turn off the oven and crack the door a bit to let cake cool for 5 minutes.
- Transfer to a wire rack to let it cool completely.
- Chill in the fridge for 2 hours before serving.
FINAL TOUCHES
- Scatter citrus slices on top.
Notes:
Use the bottom of a measuring cup to press the shell into the pie pan before cooking.
