CITRUS CHEESECAKE

Ingredients


SHELL

  • 225 g Graham Crackers
    • smashed
  • 3 Tablespoons Brown Sugar
  • 6 Tablespoons Butter
    • Melted
  • Dash of Salt

FILLING

  • 445 g (two 8-oz packages) Cream Cheese
    • Room Temperature
  • 1 Cup Sour Cream
  • 1/2 Cup Sugar
  • 2 Eggs
  • 3 Tablespoons Lemon Juice
  • 3 Tablespoons Lemon Zest
  • Pinch of Salt
  • Grapefruit

Directions


SHELL

  1. Preheat oven to 325 degrees.
  2. Smash graham crackers into crumb and put into a bowl.
  3. Add the brown sugar, melted butter and salt to the bowl.
  4. Mix to combine and then press into a 9-inch pie plate.
  5. Bake 10-12 minutes until golden brown.

FILLING

  1. In a food processor, add cream cheese, sour cream and sugar. Mix until smooth (2 minutes)
  2. Add eggs, juice, zest and salt and process to combine.
  3. Pour the filling into the crust and bake until almost set, 20-30 minutes.
  4. Turn off the oven and crack the door a bit to let cake cool for 5 minutes.
  5. Transfer to a wire rack to let it cool completely.
  6. Chill in the fridge for 2 hours before serving.

FINAL TOUCHES

  1. Scatter citrus slices on top.

Notes:
Use the bottom of a measuring cup to press the shell into the pie pan before cooking.
