CHICKPEA SALAD

Ingredients


  • 15-Ounce Can of Chickpeas
    • Drained and Rinsed
  • 2 Stalks Celery
    • Finely Chopped
  • 3 Green Onions
    • Thinly Sliced
  • 1/4 Cup Dill Pickles
    • Finely Chopped
  • 1/4 Cup Red Bell Pepper
    • Finely Chopped
  • 3 Tablespoons Mayo
  • 1 Clove Garlic
  • 1 1/2 Teaspoons Yellow Mustard
  • 1 1/2 to 3 Teaspoons Lemon Juice
  • 1/4 Teaspoon Fine Sea Salt
  • Freshly Ground Black Pepper

Directions


  1. In a large bowl, mash the chickpeas until flaked in texture.

  2. Stir in the celery, green onions, pickles, bell peppers, mayo and garlic until combined.

  3. Stir in the mustard and dill and season with lemon juice, salt and pepper, adjusting the quantities to taste.

  4. Serve with toasted bread, on crackers, wraps or on a leafy green salad!

Notes:
I personally like about 3 or 4 times the amount of garlic.
