Ingredients
- 15-Ounce Can of Chickpeas
- Drained and Rinsed
- 2 Stalks Celery
- Finely Chopped
- 3 Green Onions
- Thinly Sliced
- 1/4 Cup Dill Pickles
Finely Chopped
- 1/4 Cup Red Bell Pepper
- Finely Chopped
- 3 Tablespoons Mayo
- 1 Clove Garlic
- 1 1/2 Teaspoons Yellow Mustard
- 1 1/2 to 3 Teaspoons Lemon Juice
- 1/4 Teaspoon Fine Sea Salt
- Freshly Ground Black Pepper
Directions
- In a large bowl, mash the chickpeas until flaked in texture.
- Stir in the celery, green onions, pickles, bell peppers, mayo and garlic until combined.
- Stir in the mustard and dill and season with lemon juice, salt and pepper, adjusting the quantities to taste.
- Serve with toasted bread, on crackers, wraps or on a leafy green salad!
Notes:
I personally like about 3 or 4 times the amount of garlic.
