Ingredients
BATTER
- 3/4 Cup Butter
- 200 g Chocolate Chips
- 4 Teaspoons Instant Espresso
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Cardamom
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Salt
- 3 Eggs
- Room Temperature
- 1/2 Cup Sugar
- 1/2 Cup Brown Sugar
- 2/3 Cup Flour
Directions
Preheat oven to 350 degrees.
Grease an 8 inch baking pan and line with parchment paper for easy removal.
BATTER
- Combine butter and chocolate in a medium pot. On low heat, stir constantly until the mixture melts.
- Add instant espresso, vanilla, cardamom, cinnamon and salt to the pot and stir. Remove from heat and set aside to cool.
- In a medium bowl, combine eggs, sugar and brown sugar. Beat on high, 5-10 minutes, until mixture is pale and creamy.
- Add the chocolate mixture to the bowl and fold into the egg mixture gently.
- Sift the flour into the bowl and fold gently. DO NOT OVERMIX!!!
- Bake for 30-35 minutes. Let cool for 1 hour before removing from pan.
Notes:
Be careful not to over bake.
