Ingredients
DOUGH
- 1/2 Cup Butter
- Browned
- 1 1/2 Tablespoons Miso Paste
- 1/2 Cup Sugar
- 1/2 Cup Dark Brown Sugar
- 1 1/4 Cup Flour
- 1/2 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1 Teaspoon Vanilla Extract
- 1 Egg
- 6 Oz Dark Chocolate
- Chopped
TOPPING
- 3 Tablespoons Sesame Seeds
Directions
- Preheat the oven to 350 degrees.
- In a saucepan over medium heat, melt and brown the butter. With a wooden spoon, scrape the brown bits off the pan and then pour into a small bowl.
- Add the miso paste to the brown butter and whisk to combine.
- In a medium bowl, add flour, baking powder, baking soda and salt.
- In a large bowl, combine sugar and brown sugar. When the miso/butter has cooled, whisk again to combine and then add to the sugar and mix.
- Add the egg and vanilla to the large bowl and whisk until the mixture turns pale and creamy.
- Add the dry ingredients and fold together with a spatula. Do not over mix.
- Add the chocolate and stir to combine.
ASSEMBLE
- Put the sesame seeds into a small dish.
- Roll cookie dough into a ball shape and then press into the sesame seeds to coat the top.
- Arrange on baking sheet and bake for 9-11 minutes
Notes:
It was worth it to chop the chocolate down from large chip size. It melted really nicely.
