Serves: 4-6 Waffles

Ingredients
- 1 Cup Flour
- 1/4 Cup Cornstarch
- 1/2 Teaspoon Baking Powder
- 1/4 Teaspoon Baking Soda
- 1/2 Teaspoon Salt
- 1 Cup Buttermilk
- 1/3 Cup Unsalted Butter
- Melted
- 1 Egg
- Room Temp and Separated
- 1/4 Cup Sugar
- 1 1/2 Teaspoon Vanilla Bean Paste
Directions
- In a bowl beat the egg white until stiff peaks form and set aside.
- In a medium bowl, combine the flour, cornstarch, baking powder, baking soda and salt. Mix well.
- Add the milk, butter, egg yolk, sugar and vanilla and mix just until combined. Do not overmix!! Some lumps are okay!
- Gently fold in the egg whites until combined. Be careful to not to deflate the egg whites.
- Let the batter sit for 30 minutes and then heat the waffle iron.
- Cook the waffles!
Notes:
Vanilla extract is a fine sub for vanilla bean paste
